Not sure, but Texas may have better defense than anyone in the Pac 12. Nevertheless, Utah shooting 50% in the first half.

However, Texas has poured out the best offense I've ever seen from them, 70%, which in addition probably says something about the Ute's defense.

Not a particularly big crowd at Austin (or Baylor) compared to the frenzied hordes at Arizona and Iowa.

Correct. Roberts plays a big rotation where there's always enough energy on offense, but never enough cohesion on defense. Utah's defense imo is soft enough that good teams will take advantage 10 times out of 9. In spite of that, I genuinely don't think they'll become more than what they are. (Continuing with my streak of saltiness, I hope they start cratering next year as well.)
