Because that worked so well, in the first two games?
Honestly, when Griner is motivated (which isn't often enough by half), there isn't anybody in the league who can stop her, one-on-one, with the possible exception of Gojira. The best chance anybody has of slowing her down, is to make her have to work on defense. And the only player the Aces have who can make Mothra work on defense, is Gamera.

Cambage can't stop Griner one-on-one when she's in game shape, let alone now. Hamby certainly can't matchup with her. That means one of three options...
A: Double Griner and hope Turner cools off
B: Bring in Stokes for extended minutes, which clogs up the offense
C: Let Griner score at will in the paint
In the regular season matchups they went with C twice (a win and a loss with Griner averaging 30ppg) and B once (a one point win in Phoenix).

It worked enough in Game 1. Stokes barely played in Game 2.

Their best option is to start Cambage, and make Griner defend against her size, for however many minutes Cambage can give them. Vegas has proven that they don't have to beat Griner to beat Phoenix, but they can't let Griner dominate and give up a ton of three-pointers, and then also let them score at will, on wide-open layups, because they're too busy helping on Griner.
