The best cover I have ever heard is Ryan Adams version of "Wonderwall," originally by Oasis. He completely strips it down and makes it really bare and raw. Totally changes what the song is.

The Bangles "Hazy Shade of Winter" is better than Simon & Garfunkel's original. Same for Linda Ronstadt's take on the Everly Brothers' "When Will I Be Loved".
Joan Jett's version of the Rolling Stones' "Star Star" is inspired.
Rilo Kiley did an interesting cover of "Handle With Care" that gives an entirely different perspective than the Travelling Wilburys had in the original.

That's what I like. A good cover song isn't a singer doing karaoke of someone else's song. Its a whole new interpretation, IMO.
Tori Amos doing Depeche Mode's "Enjoy the Silence" is another one.

That's the first song that came to mind!
I saw Maxwell perform that song live at the Greek Theatre.
It was one of the best live performances I've ever seen.

Gary Jules cover of Tears for Fears "Mad World" off the Donnie Darko soundtrack. Very morose. It's a great song to crank up on your iPod and walk around the city to -- one of those songs that becomes the sountrack of the world going on around you instead of just the song playing in your headphones (does that make sense?).

Indigo Girls' live performance of "Tangled Up in Blue" on the "1200 Curfews" album - it's a live album.
They did a number of covers on that album, including:
Midnight Train to Georgia
Down By the River
River
Bury My Heart at Wounded Knee
But "Tangled" is my fave.

24duzitall brought up one of my personal favorites, Johnny Cash's version of "Hurt" by Nine Inch Nails- but does it count as a cover when the original singer says that the song now belongs to the covering singer?
I also perfer Garth Brooks's version of "Shameless" to Billy Joel's- but the best version is the one they did together in concert.
Heather Nova does a very pretty cover of "We Can Work It Out" by the Beatles.
Tori Amos's cover of "Heart of Gold" is really weird... but I love it. She also did a slow version of "Livin' on a Prayer" that I really like.

Martina McBride did an entire cd of covers called "Timeless"

Ben Folds does a cover of Liz Phair's "Chopsticks" in concert sometimes. His voice is so different from hers that even that gives it a different feel. The gender-bending effect is also a nice effect.

I forgot about those Martina McBride covers! I actually got to see her do some of them live at Radio City. LOVED her version of Rose Garden.
Have the Manson and Cash covers of "Personal Jesus" been mentioned yet? I love how they, and Depeche Mode, each bring something different to the song.

My favorite gender switching cover is Lick the Tins doing Billy Joel's "Only the Good Die Young". Talk about changing the subtext!
