I forget when the league usually announces it's MVP winner, but if Sylvia Fowles was winning it, wouldn't they have announced it at last night's game?

Or are they giving the award to Brittney Griner and waiting until the Mercury's home game to award her?

No because Lisa Borders was busy giving the defensive award to Beard. MVP always comes last. It will be Thursday in Minny I suspect

Game 2 tomorrow is technically the last game guaranteed to be played in Minnesota, so they'll probably do.it then. Although I don't think they'd be taking a huge risk by assuming there'll be more.

on ESPN2 yesterday, they said MVP will be announced on Thursday.

MVP is not always last. It's usually one of the first. Last year MVP was announced on September 27th, before the 6OY (28th), ROY (29th), DPY (30th), and COY (30th). The All WNBA teams are always last, and always announced during the finals (last year on October 14th).
